Spiced Carrot and Lentil Soup with Roasted Chickpeas

A delicious heart-warming soup packed full of flavour and goodness and low in fat too. I shred the carrots to release maximum flavour and add toasted cumin seeds and a tiny amount of chilli flakes to give a depth of flavour. I only add a little milk and the soup is finished with a tiny drizzle of yoghurt, harissa paste and some roasted crispy chickpeas.
Tip: As this soup is inspired by Middle Eastern spices, it would be great served with some naan bread or some feta cheese crumbled on crispy toast.

My Mum was an amazing chef and taught me how to cook. My food story began when I was a songwriter, our studios were in a remote part of Kent with nowhere to buy food so I cooked for everyone. Wholesome and tasty soup with lovely flavours. Only a few chickpeas but sadly not crispy due to being frozen

Looks very appetising. Love the texture and addition of whole chickpeas for mouth satisfaction. Like the synergy of carrot, lentil, spices that neither compete or overpower each other, so that each individual flavour is noted.
Would like a little more whole chickpeas, otherwise wouldn't change anything.
